Michelin Gourmet Journey Fest at SEVEN by Matteo De Carli
Come and enjoy a Michelin-starred gourmet tasting prepared for you by Executive Chef Matteo De Carli from Casa De Carli Prague at SEVEN Restaurant Café in Košice.
Matteo De Carli hails from Varese in northern Italy, but his professional journey has taken him through Geneva, the Four Seasons in Dublin, Dubai, and all the way to Cipriani in New York. He ultimately combined his experiences from various culinary cultures with his Italian roots in Prague, where he and his wife, Lenka Hermanová, opened Casa De Carli in 2012. His cuisine is rooted in what makes Italian gastronomy exceptional: high-quality ingredients, purity of flavor, and apparent simplicity. However, it is not a classic trattoria. Matteo offers a contemporary, precise interpretation of Italian cuisine with a subtle Northern Italian touch, featuring homemade pasta, bread, and ice cream, and plenty of room for creativity.
In 2025, Casa De Carli earned one MICHELIN star. The restaurant has been featured in the Michelin Guide since 2012. Matteo also received the Buona Cucina award from the Accademia Italiana della Cucina for representing high-quality Italian gastronomy in the Czech Republic and was named “Golden Foreign Chef” in the Golden Chef poll.

Matteo’s story also perfectly captures the ambition of Taste Košice at VILLA SANDY. An Italian who has traveled the world and turned Prague into a place for his own culinary vision—now recognized with a MICHELIN star—is coming to Košice for one evening.
This is an opportunity to experience international gastronomy not while traveling, but at a single table at SEVEN—and another way to build Košice as a gastronomic destination through exceptional personalities.
The evening will also serve as a celebration of Billecart-Salmon.
However, this evening will be exceptional for one more reason. Together, we will officially celebrate SEVEN Restaurant Café’s appointment as the ambassador for Billecart-Salmon Champagne in Slovakia.
